Tacos are always a fun and tasty Mexican food to make; they can be loaded with almost anything. But, in this seafood dish, were loading our tacos with shrimp with guacamole, sour cream, and cheese!

How to make this shrimp tacos recipe:
Ingredients
For the tacos:
- 2lbs of fresh shrimp (peeled, deveined & tails removed)
- 1-2 teaspoons of onion powder
- 1-2 teaspoons of old bailey seasoning
- 2 tablespoons of olive oil
- 1/2 cup of freshly chopped onions
- 1/2 cup of freshly chopped tomatoes
- 1/2 cup of chopped cilantro leaves
Extra stuff for the tacos:
- 6 small tortillas (corn or flour)
- Canola or Coconut oil (optional)
- Sour cream (optional)
- 1-2 cups of shredded cheese
For the guacamole sauce:
- 3 organic avocados
- 1/2 cup of freshly chopped onions
- 1/2 cup of freshly chopped tomatoes
- 1/2 cup of chopped cilantro leaves
- 1/2 cup of freshly chopped green onions
- 1-2 teaspoons of onion powder
- The juice of 2-3 organic fresh limes
Cooking instructions
How to cook the shrimp
- Add the fresh shrimp to a bowl, along with 1-2 teaspoons of onion powder and old bailey seasoning. Mix ingredients well.
- Add two tablespoons of olive oil (alternatively, you can use coconut or avocado oil) to a skillet/frying pan on medium to high heat.
- Add chopped onions, chopped tomatoes, and fresh cilantro to the heated pan to release flavors before adding the shrimp.
- Next, add your seasoned shrimp to the hot pan. Mix all the ingredients and sauté for 5-8 minutes until shrimp is cooked through.
How to prepare the guacamole sauce
- Add three diced avocados to a bowl, along with some freshly chopped onions, tomatoes, cilantro, and green onions. Mix well to infuse all those flavors.
- Add onion powder and lime juice to the bowl, and mash the ingredients into a creamy, guacamole dip consistency.
How to prepare the tortilla tacos
- Add the oil (avocado or coconut oil are healthier choices) of your choice to a high-heat skillet.
- Fry one tortilla wrap for 30 seconds to get a golden brown color. And then fold the tortilla wrap to form a taco shell. Fry for an additional 30 seconds until the tortilla retains its new shape. Allow the taco shells to cool.
- Finally, fill the taco shells with the cooked shrimp. Top with guacamole sauce, sour cream, shredded cheese, and garnish with some fresh cilantro.
